His professional career is an ode to the sea and to fish, and his gastronomic fare gets the very best out of them.
Carlos del Portillo learned the basics of cookery at the renowned Catering School in Madrid's Casa de Campo, and shared classrooms and student shenanigans with leading chefs such as Alberto Chicote and Paco Roncero.
He cut his culinary teeth in some of the mythical Madrid restaurants in the 90s, such as the Hotel Ritz, Príncipe y Serrano and Casino de Madrid. At the now defunct Velázquez 128 restaurant he had already demonstrated his fondness for fish, which he has now developed with his personal touch in his own gastronomy project, Bistronómika. Bistronómika opened in the late winter of 2016 in the Las Letras district, in the summer of 2019 it moved to calle Ibiza, and it now forms part of the Bulbiza project.
The Madrid chef constantly focuses on cuisine crafted from top-quality produce combined with a range of cookery techniques, with a particular emphasis on grilled food.
