Nature as a source of inspiration has acted as a guide to the new phase undertaken by this Danish chef, who has found a way to express himself through fire.
In 2017 Nicolai Tram began an new life with his wife Eva and two sons. They found city life too trivial, and longed to live next to nature, and so they moved from Denmark to the Swedish countryside.
There they set up a catering project, Knystaforsen - which earned a Michelin star and also a Michelin green star - at a former saw mill beside a river in the middle of a forest, offering a fare based on local ingredients.
Fire as a tool is one of the specialities. The philosophy behind this is that food on an open fire is an original, simple format to enable human beings to make a connection between nature and food. Both concepts as basic components of life.
Tram also runs a pizzeria in Rydöbruk (Sweden), which, of course, has an open fire.
