Innovation and sophisticated nostalgia are the watchwords of this ice cream chef.
Zen Ong is a young Australian/Indonesian chef who lives in Los Angeles. His trajectory began in Sydney, where he was named Trainee of the Year by Time Out magazine during his stint at the Berowra Waters Inn. He then worked in Bentley Restaurant & Bar and Yellow, where he was also acclaimed by The Sydney Morning Herald, the city's leading food publication, as one of Sydney's best young talents.
His next stop was the US, where he worked at EP&LP as head pastry chef, and then took over kitchen operations as executive chef. Zen went on to delve into his Indonesian roots with the launch of the INDA restaurants, and this elevated him to the post of head chef and director of the culinary design team at Yeezy. This experience led him to conduct research into RTD, culminating in Zen's first outlet, his ice cream parlour AWAN.
