Madrid Fusión's Acknowledgement of Hilario and Eusebio Arbelaitz
Zuberoa and the surname Arbelaitz form part of the country's gastronomic history. The time has come to acknowledge everything they have contributed.
Zuberoa has now closed after 52 years - one of the leading exponents of New Basque Cuisine, run by the Arbelaitz brothers. A landmark for many generations of chefs, this old farmhouse in Oiartzun is closing down as a restaurant, but it leaves behind a legacy to be honoured by Madrid Fusión Alimentos de España this year.
