What does a Master Sommelier look for in a Spanish wine?

Xavier Rousset, the youngest Master Sommelier in history, will be teaming up with Ferran Centelles, former sommelier at El Bulli, to select the Spanish wines that have the most potential to conquer London.

Currently running eight restaurants in the British capital, Xavier Rousset is something similar to "the king of wine in London”. The man who was the youngest Master Sommelier in history is now a leading restauranteur and a major barometer in terms of discerning what a wine has to have to succeed in the city of the River Thames. He will also be drawing on his own experience to explain what Master Sommeliers can contribute to the industry.
