“If the food we provide at Mugaritz is the outcome of R+D established during our period of creativity, why not do the same with wine?”
“Why not ask our diners to trust us with their wine glasses and allow us to serve them options defined along with the wineries, from a creative and R+D perspective, as is usually the case with our selection of recipes?” It was questions such as this which led Mugaritz** to redefine the role of beverages on a menu, and add this to what they share with their diners: their very own mutating range of wines, Vis à Vis. On this premise, sommelier Kristell Monot and Julia´n Otero from the R+D team take a look at this highly acclaimed Basque restaurant's collection of wines.
