“Why not ask our diners to trust us with their wine glasses and allow us to serve them options defined along with the wineries, from a creative and R+D perspective, as is usually the case with our selection of recipes?” It was questions such as this which led Mugaritz** to redefine the role of beverages on a menu, and add this to what they share with their diners: their very own mutating range of wines, Vis à Vis.
